Lemon Cake

1 pkg lemon Jello (reg size, not big box)
1 pkg of yellow cake mix (I like the kind with pudding in the mix)
4 eggs unbeaten
3/4 cup of cooking oil - like corn oil or canola
2 cups of powdered sugar
2 lemons

Add 1 cup of hot water to jello. Stir until completely dissolved. Allow to cool. Add rest of ingredients to Jello and mix well. Pour into oblong pan - 13" x 8′ (Do not add powdered sugar or lemons yet)

Bake at 350 degrees for about 45 minutes. Have ready 2 cups of powedered sugar and the juice of 2 lemons freshly squeezed. Mix powdered sugar and lemon juice together. While cake is hot, poke holes in top with fork about 2 inches apart. Pour lemon juice and powdered sugar mix over the top. Cut when cool.

If you have a little time to spare and want to make something a dessert that has a cake-like taste in cookie-like bite sizes, this is a great dessert to make. This recipe makes about 4 dozen cookies. There is little to do to prepare and mix it and there is not much of a mess to clean up. These cookies are a winner that are easy to make.

  • 1 18.5 oz box of lemon cake mix
  • 1 4.5 container of cool whip
  • 2 eggs
  • powdered sugar

Mix dry cake mix, thawed cool whip and eggs. Drop by teaspoon onto a greased cookie sheet. Bake at 350 degrees for about 10-15 minutes. Cookies spread out as they bake. Sprinkle tops with powdered sugar after taking the cookie sheet out of the oven.
