Lemon Cake

Ingredients

  • 1 pkg lemon Jello (reg size, not big box)
  • 1 pkg of yellow cake mix (I like the kind with pudding in the mix)
  • 4 eggs unbeaten
  • 3/4 cup of cooking oil – like corn oil or canola
  • 2 cups of powdered sugar
  • 2 lemons

 

Directions

Add 1 cup of hot water to jello. Stir until completely dissolved. Allow to cool. Add rest of ingredients to Jello and mix well. Pour into oblong pan – 13″ x 8′ (Do not add powdered sugar or lemons yet)

Bake at 350 degrees for about 45 minutes. Have ready 2 cups of powedered sugar and the juice of 2 lemons freshly squeezed. Mix powdered sugar and lemon juice together. While cake is hot, poke holes in top with fork about 2 inches apart. Pour lemon juice and powdered sugar mix over the top. Cut when cool.

    I’ve made lemon cake before, but never using lemon jello. Sounds great. Thanks for the recipe.
